Salmon, avocado and cucumber inside. Seared spicy crab on top with scallion and masago, finished with eel sauce and spicy mayo. I check every one before it leaves my counter. If the sear isn't even, it doesn't go in the box.

Underneath it's a crab and cucumber roll. What makes a Rainbow Roll is the top: each slice cut to the width of the piece under it, pressed just enough to hold and not enough to crush the rice. It takes a minute longer than it should. That minute is the point.
