Best Thing Flopping in Dallas is a food truck that specializes in serving up the most delicious fried catfish you can find. With a rich history dating back to 1980, this family-owned business has been delighting locals with their mouthwatering catfish for decades.
The story of Best Thing Flopping begins with Rev. Louis "Jack" Carroll, who founded Louisiana Fried Catfish in 1980. The Highland Hills location quickly gained a reputation as the go-to spot for the best fried catfish in Dallas. In 1981, Jack's daughter Armentha "Peaches" Carroll took over the business at a young age, right after finishing high school. She successfully managed the business on her own until 1988 when her husband, Johnny "Blue" Johnson, joined her.
Together, Peaches and Johnny operated Louisiana Fried Catfish until 1994 when Peaches decided to open another location called Peaches Louisiana Fried Catfish and Chicken in Duncanville. This new venture was managed by Peaches along with her father and mother until 2004 when her father's health declined. At that point, he made the decision to pass on the business to his nephew, Andre "Big Dre" Baker, who now runs it under the name Louisiana Fried Catfish and Chicken.
Continuing this proud family tradition is LaChristopher "Chris" Carroll, the grandson of Rev. Louis Carroll. In honor of his grandfather's legacy and love for fried catfish, Chris has launched Best Thing Flopping food truck. With every bite of their crispy and flavorful catfish, you can taste the dedication and passion that has been passed down through generations.
