My childhood dream for as long as I can remember was to be a chef. I wanted to wear the coat, yell “Bam” like Chef Emeril J. Lagasse III did on tv and cook using the best ingredients in the world.
Getting into the industry definitely tempered my expectations a bit 😂 but I genuinely can say, I do what I love for a living. Always ups and down in whatever you do but learning from the downs I think is the most important part to get back up.
If in my lifetime, I got a dollar for every time I was asked this question, I could cook and not charge a dime for it.
Still learning in some ways as business owner but this specifically while I worked in restaurants took me AWHILE to learn. Early on I was always the one who would work a double because someone called out, work open to close and come back to open. I remember there was a day I clocked out working close to 19 hours..only to open again a few hours later. Trust me, say no, prioritize yourself first because a majority of restaurants/clientele won’t.
As someone who worked in the industry before deciding to try culinary school I will say this. Experience teaches you a lot more than being in a classroom can.
Value what YOU bring the to the table.
Curiosity and experimenting is what I love most about this field as it pertains to food, culture, ingredients and even the people you meet/work with. As soon as you think you know it all and become unteachable, is when the decline happens.
A tough one to hear but not everyone is going to like what you present to them. You will find your tribe, just be patient, use it as constructive criticism and keep it pushing.
There are some days you will be so busy you can’t think, you just have to move at maximum output. There are others where it will feel like you can’t find a client or make a sale. Each has its own season.
