Good Morning Facebook Friends! Hope everyone is having a great Holiday weekend! I’m always a little sad on this weekend because I know Summer is really over. I am looking forward to Fall though because I am so over these hot 🥵 sunny days. Bring on the cooler weather! It can’t get here soon enough!
This week we will be closed on Monday. We will reopen on Tuesday and since we all have to go back to work or go back to school or get back to the routine I thought about School Night Dinners. We always call the Monday through Thursday School nights! It’s a school night you have to get home, have dinner, and get ready for bed. The only thing fun about a school night is a good dinner being served at home. When I was a child and when I had my own child we always sat down at the table on a school night and had a good family dinner.
This week’s menus are definitely worthy of a delicious School Night Dinner.
We start the week on Tuesday with what has become one of my very favorite meals. Cheese Burger Pie. Ya’ll it’s soooo good. I like to pile lettuce, tomato, and Onion on top of mine with a Honey mustard dressing. So delicious it taste better than a Cheese Burger. Made with ground beef. Serving it with mashed potatoes because you know Meat and Potatoes are like Salt and Pepper. And this time I’m giving you the whole 9 inch pie because you are definitely going to want to have leftovers. Makes me want a cheese burger right now.
Wednesday we’re going Italian. I think this menu is so kid friendly but big kids love it too. Nothing but deliciousness on a plate.
Stuffed Manicotti with Chicken and Alfredo Sauce. Big Caesar Salad, oven dried Tomato 🍅 Focaccia and dessert which I am so excited about a Spumoni Trifle. A combination of Chocolate, Cherry and Pistachio. Yum!
Then we wrap up the week with something I made at least once a week when Analisa was little a whole roasted Chicken. So easy to just throw in the oven and let roast for a couple of hours low and slow. So juicy and delicious. This week I’m doing it with a veggie and cranberry rice pilaf. Fresh herbs and lemon. A nice Fall Salad and Apple maple Phyllo tarts.
I think it sounds like a great week of Dinners that transition Summer into Fall. Can’t wait to get back and start cooking some Fall feeling meals. Make your School Nights special with a Dinner to Go from No Worries.

Hello Facebook Fans! Happy Sunday! Can y’all even believe August is over and we’re rolling into September and it’s still soooo hot out side. Well that’s Texas right! I know we’re all looking forward to those beautiful Fall day in the very near future. I definitely feel like this truly is the last weekend of Summer officially with Labor Day coming this week. So what do we serve for dinner it’s to hot for a Fall menu and it’s to late in the Summer for a real Summertime menu.
What inspired me this week? And then it hit me, I have literally been absolutely obsessed with everything about Dolly Parton. Her passing has hit me so hard in the heart. I loved her so much. Some of my early childhood memories are of Dolly.
I was lucky enough to see her preform one time in Nashville and gosh did she have star power. I think she might have been one of the most if not the most loved people in all the world. Seeing so many tributes, stories and testimonies of how generous,genuine, and gracious she was to everyone that crossed her path Dolly was the real deal. And not only was she an unbelievable Artist, Business Woman, Actress, Philanthropist she was a really good Southern Cook. She never gave up cooking even when she was so famous. She wrote several cookbooks during her life and shared her family favorites. I have them all.
This week is a tribute to Dolly Parton’s favorite Southern Recipes. I have been researching all weekend and making sure every item in this weeks menus was a Dolly Parton Favorite.
Starting with Monday she says a good Pork roast was her absolute favorite Sunday Supper. Smothered in gravy and paired with Blackeyed Peas, Cream Corn and Sweet Cornbread. Dessert had to be her Mama’s Banana Pudding.
Tuesday Dolly loved Thanksgiving and said she always celebrated it with her family. She loved cooking with all her sisters during the holidays. She did say growing up they usually had Chicken because that’s what they raised and couldn’t afford to buy a Turkey. But once she could afford it they always served Turkey. And I bet Dolly would agree with me that Turkey and Dressing should definitely me served more than once a year. And with this we are serving Chocolate Cobbler for dessert. Something I have never made but we’re using a recipe right out of Dolly’s cookbook.
Wednesday we’re making another one of Dolly’s favorite Sunday Suppers. Fried Chicken, this will be served with mashed Potatoes. In interviews I have heard Dolly say Potatoes were her most favorite food. Didn’t matter how they were made she loved them anyway.
Thursday we’re ending the week with another classic Southern Dinner and one of Dolly’s favorite meals. Fried Catfish! We will oven fry ours and served it with Cole Slaw, Green Tomato Relish, and of course Hush Puppies. Dessert another favorite Lemon Ice Box Pie.
It’s going to be a week full of Southern Cooking at its best and I know Dolly would be proud that she inspired all these delicious meals. Thank you Dolly for everything you did in this world. You were the definition of an Amazing Human. I will always Love 💕 you!
