Getting down to not much in pantry or fridge, stock shopping soon. 🥹. So tonight I wanted soup even though it’s 105 right now. I made a creamy potato and ham soup. So yummy.
1 can cream of potato soup
1 can cream of chicken
1 can corn, drained
1 cup chopped ham
2 tsp butter or olive oil
A couple sticks of celery and carrots (left over from and order of wings), small chop
1/4 onion, small dice
2-3 garlic cloves, minced
1 teaspoon dried thyme
Salt and pepper
1 can water (use soup can)
1 can heavy cream (use soup can)
1/2 cup shredded cheese
1 tsp chopped chives
In the pot add the butter or oil with the carrots, celery, onions and saute until soft. Add in the rest of the ingredients and stir to combine. Simmer until everything is blended and hot. Served with crackers.

Dinner tonight made a stuffed steak roll on a garlic mushroom pan sauce and sauteed veggies. I like to check the meat bin at the store for the 50% off for us (not customers) and picked up a package of couple sirloin steaks for $5.00. Then split them lengthwise and pounded out. Drizzled olive oil, layer of spinach, shredded cheese, sun-dried tomatoes, salt and pepper. Rolled and secured with twin. Drizzled outside with olive oil and seasoned salt and pepper. Heated skillet, added butter and browned each roll on all sides. Removed, covered to set. Then sliced. Turned out delicious! 🥰

Had and order for chocolate cupcakes with a renaissance theme. I think they turned out pretty even with my tremor. 🥰

Last night for dinner I made BBQ pork Chops, Creamed Corn, Beans and Shredded Cauliflower hash browns. 🥰

Dinner tonight I made Crispy Tater Tot Tops, Sauteed Spinach with egg, Sauteed mushrooms, Pan Seared Steak and Peach and Goat Cheese Salad. 😋🥰

Had some leftover collard greens and searched for some ideas to use with them for leftovers. So I decided to make Spicy Collard Green Gumbo with shrimp and sausage. Then made rice. So good.

Made enough Colcannon Soup for 100 last Friday night’s Lenten Supper at church. Also served Caesar salad, pasta and rolls. It was a hit and not a drop left. 🥰
