Tasting Notes: Black Tea, Prune, Molasses
Region: Kayanza
Growing Elevation: 1,800 - 2,000 masl
Producer: Various smallholder producers
Variety: Red Bourbon
Process: Washed

It is rare that we have a Burundi offering, and this one was too good to pass up!

Sourced through our friends at Red Fox Coffee Merchants, this coffee stood out on the table for its rich body and unique flavor profile. The fragrance opens with dark sweetness and warming spices, leading into flavors of dried dark fruits — prune, raisin, and fig. The finish lingers like a well-steeped black tea, with a pointed acidity of orange citrus.

Burundi is a small, landlocked nation in East Africa bordered by Tanzania, Rwanda, the Democratic Republic of Congo, and Lake Tanganyika. Coffee is a vital cash crop here, providing smallholder families with the income needed for education, livestock, and essential household needs. These coffees are grown at altitudes ranging from 1,800 to 2,200 meters above sea level in rich red clay soils, in a region locals refer to as the “up country” — bordering the vast Kibira National Forest, where a dense canopy creates a microclimate of cooler temperatures and higher rainfall.

Cherries from the Kayanza area are delivered to the Umoco washing station — whose name means “light” in Kirundi — where the coffee undergoes a double-fermentation process of 12 hours wet fermentation followed by another 12 hours in cement tanks. The parchment is then dried for 20 to 25 days on traditional African raised beds.

Red Fox remains committed to supporting Burundian producers by opening new markets and helping them secure competitive, sustainable prices. We are grateful for that relationship and proud to bring this rare offering to you!

⚡️New Single Origin Coffee Drop⚡️

Tasting Notes: Raspberry, Lemon, Brown Sugar
Region: Santa Maria de Dota, Tarrazu
Growing Elevation: 1,900 masl
Producer: Solis Family
Variety: Catuai
Process: Natural

We sourced this offering from our longtime partners at Falcon Coffees. It stood out to us immediately on the cupping table, impressing us with it’s vibrant, fruit-forward flavors. The fragrance is intense, providing notes of fresh citrus fruits. The first sip shows the pointed lemon acidity right off the bat, mellowing out into notes of red fruit and dark sugars. Overall, the cup is complex, bright, and well balanced.
Alto el V***r is a micro-mill in the rural area of Santa María de Dota owned and operated by Mayra Solis, along with her son and two daughters. The name, meaning high v***r, was inspired by the phenomenon of fog settling at high elevations, as the overall altitude of the farm reaches up to 2,000 meters.
Led by Doña Mayra, this project began in March 2020 during the COVID pandemic, focusing on producing high-quality coffee and providing an unforgettable experience to all consumers. The project started when her children, who had graduated from university and returned home, decided to join their mother Mayra’s dream. This is a family that always strives to add value to coffee through processing, learning cupping directly, roasting, and constantly considering ways to continuously improve quality.

The coffee itself is grown on the Alto el V***r farm, of which 90% is a natural conservation area. There is also a spring within the farm that supplies water to part of the Santa María de Dota community. The family mostly protects rather than destroys the farm, preserving the habitat for surrounding flora and fauna.

Two new coffee varieties are now available from Finca Granitos de Ortiz - Washed process Red Bourbon & Red Honey process Geisha.

We have been purchasing coffee from the Calderones family for over a decade, and each one continues to impress us!

Granitos is owned by the Calderones family. Located in the Dota Valley of Costa Rica’s Tarrazu region, the farms are run by Don Omar Calderon while the wet and dry mills are managed by his four daughters. This truly is a family owned and operated enterprise. We’re encouraged by their inspiring work ethic and love for their land, and they continue impressing us with the high quality coffees they produce. We hope to support their efforts for years to come.

Come by our shop & pickup a bag, or try a pour over. These are also available in our web shop ✌️

ICE OUT of EVERYWHERE NOW!

As a small local business, we want to do everything in our power to stand in solidarity with the immigrants, asylum seekers, and protestors in our local community, and across the country. We are opposed to the ongoing violence, and enforcement actions by ICE in local communities. While some will, (and since our last post) have said that this is a political issue, and that we should just be quiet, and make coffee. We fully believe this is a human rights issue, and we will always be vocal, and fight for the human rights of all - regardless of citizenship, ethnicity, or gender identity. Y’all means all.

However, between supporting our hourly employees, local vendors, and facing our recent economic slowdown due to the inclement weather, we decided that closing our doors for the day isn’t an option for our business. Instead, this Friday - Sunday, we will be donating $1 from every transaction to our longtime friends at the Human Rights Initiative of North Texas. You can read more about HRI at the link in our bio.

F**K ICE.
