Reminder that we are permanently closed at the downtown garland truck yard spot and will not be open today, tomorrow or any other day going forward.

Today we say goodbye to our sweet boy Neo

Thank you to everyone who came out, gave us a try, talked with us, laughed with us, cried with us and truly believed in us.

Thank you!!

Well…here we go. If you missed the crazy long live…

A new chapter in the Finch BBQ story.

If you’ve followed us for any amount of time, you probably know by now that our story has never exactly followed a straight line.

We started with a bottle of BBQ sauce.

That somehow turned into farmers markets, the State Fair of Texas, Central Market, Meat Church, World Series, catering, pop-ups, a food trailer, Downtown Garland, a Texas Monthly article…and more long days, crazy ideas, setbacks, lessons, opportunities and blessings than we could ever fit into one post.

And now, somehow, here we are again.

Standing at the beginning of another chapter we definitely didn’t see coming.

Chris has accepted an opportunity to lead the BBQ program at Childress Hall in Childress, Texas. (Just look it up and check out what we are going to be a part of)

Childress Hall is an incredible golf and hospitality destination being developed in Childress, and this opportunity will allow Chris to take everything he has spent years learning, building and perfecting through Finch BBQ and bring it into something being built on an entirely different scale.

We catered for this group a year ago and this has been a thought or a possibility we held onto a little! And then we got the call!

Chris and I have decided to take the chance.

We’re moving to Childress, Texas.!! Yes. CHILDRESS, TEXAS. 😂 We leave life as we know it and start this new journey on October 19th!

Our girls are grown and building their own lives, so this isn’t the whole Finch family packing up and moving west. This is Chris and me looking at each other and deciding that maybe this is one of those moments in life where you either take the opportunity in front of you…or spend years wondering what might have happened if you had. So we’re taking a chance on ourselves and this opportunity!

With that comes another piece of news that is definitely bittersweet for us.

The food side of Finch BBQ is coming to an end. We didn’t know it but last Saturday, Oct 3rd was our last service and honestly it was such a great day! We will come in town and do pop ups, so keep following our journey!

This trailer, this food, this little spot in Downtown Garland and every single person who showed up for us became such a huge part of our lives.

You ate our brisket.

You bought our burgers and poppers.

You ordered catering.

You brought your families.

You told your friends.

You shared our posts.

You celebrated when Texas Monthly showed up.

You came back again and again.

You let us feed you, and somewhere along the way, so many of you became part of our Finch Family.

We will never forget that.

The Finch name, our sauces and rubs, our recipes, our story and everything we have spent the last several years building are still very much ours.

We just don’t know exactly what the next version of Finch looks like yet and that’s ok!

For years, we thought we were building Finch BBQ.

We thought every market, every bottle of sauce, every catering job, every brisket, every setback, every late night and every crazy decision was about trying to build this business into something bigger.

But maybe this whole time we thought we were building Finch BBQ, Finch BBQ was actually building us for something bigger?

Maybe it was preparing Chris for an opportunity like this.

Maybe it was teaching us how much we’re capable of.

Maybe it was teaching us to take risks, figure things out as we go and trust ourselves when the path doesn’t look anything like the one we originally planned.

And maybe Finch BBQ still has chapters we haven’t even imagined yet.

We honestly don’t know.

But we do know that when an opportunity like this comes along, sometimes you have to be brave enough to walk through the door.

So this isn’t really goodbye to Finch BBQ. It’s goodbye to the food side of Finch BBQ.

And as emotional as that is, we are also genuinely excited to find out what comes next.

Garland will always be part of the Finch BBQ story. This community gave us a place to grow, fail, learn, try again and ultimately prove to ourselves that this little BBQ dream could become something real.

Now we’re taking everything it taught us and carrying it into the next chapter.

Here’s to taking chances!

Here’s to betting on yourselves!

Here’s to being willing to change the plan when an unexpected door opens.

And here’s to whatever comes next.

New chapter. Same Finch. ❤️
