Founded by Angelica and Yvette, who reconnected after almost 2 decades, this unique venture combines their love for lumpia with their individual and collective goals. With a menu that is 100% vegan, using nut meats like walnut and pecan, jackfruit, and occasionally plant-based meat substitutes, Daygo Lumpia brings a twist to the traditional Filipino cuisine. Eggplant Adobo: A Flavorful Twist on a Filipino Classic🍆✨

If you love the bold, savory flavors of traditional Chicken adobo but want a plant-based twist, this Eggplant Adobo is a must-try! It’s tender, tangy, garlicky, and packed with flavor—perfect over rice for a comforting meal.

Ingredients:
- 2 large eggplants, sliced into thick rounds or strips
- 4 cloves garlic, minced
- 1 small onion, sliced
- ÂĽ cup soy sauce (or tamari for gluten-free)
- 3 tbsp sarap filipino vinegar (white or apple cider)
- 1 tsp black peppercorns
- 2 bay leaves
- ½ cup water
- 1 tbsp coconut oil
- 1 tsp brown sugar (optional, for balance)
- Chopped green onions for garnish (optional)

Instructions:
1. Prepare the eggplant– Heat oil in a pan over medium heat. Sauté the eggplant until golden brown on both sides, then set aside.
2. Sauté the aromatics– In the same pan, sauté garlic and onions until fragrant.
3. Build the sauce– Add soy sauce, vinegar, peppercorns, bay leaves, and water. Bring to a gentle simmer (do not stir right after adding vinegar—let it cook for a minute first).
4. Combine & simmer– Return the eggplant to the pan, coating it in the sauce. Let it simmer for 5–7 minutes until the flavors meld.
5. Taste & adjust– Add a bit of sugar if desired, then serve warm over rice. Garnish with green onions for an extra pop of flavor.
