𝐏𝐫𝐢𝐧𝐜𝐞 𝐰𝐢𝐭𝐡 𝐚 𝐓𝐡𝐨𝐮𝐬𝐚𝐧𝐝 𝐄𝐧𝐞𝐦𝐢𝐞𝐬 🍑 Oak-aged Sour Ale w/ TX peaches & apricots / 6% ABV
Inspired by the classic novel Watership Down (and the ensuing 1978 animated film that seriously scarred me as a kid), this beautifully gilded, oak-aged sour is like a gift from Lord Frith.
Brewed in the late spring and early summer seasons of 2024, this golden sour was fermented and then aged in neutral French oak barrels with a blend of our house mixed cultures of wild yeast and bacteria. We then added hundreds of pounds of fresh freestone peaches to one barrel, and hundreds of pounds of fresh apricots to the other barrel, processed by hand and sourced right down the road in Waxahachie from Larken Farms. Then we let time work its wonders over the next 2 years, creating a vibrantly layered and juicy sour with balanced acidity and funk. Aromas of peach blossom, orchard air, and dry hay take hold, with notes of mouth-puckering peach nectar, ripe apricot flesh, and stone-fruit sweetness with a soft yet dry finish.
Now pouring in the taproom and available in both single 16oz cans and 4 packs to-go for a limited time. Take some home to your burrow. Unfiltered, unpasteurized, and can conditioned. Refrigerate 24 hours before opening.
