𝐏𝐫𝐢𝐧𝐜𝐞 𝐰𝐢𝐭𝐡 𝐚 𝐓𝐡𝐨𝐮𝐬𝐚𝐧𝐝 𝐄𝐧𝐞𝐦𝐢𝐞𝐬 🍑 Oak-aged Sour Ale w/ TX peaches & apricots / 6% ABV

Inspired by the classic novel Watership Down (and the ensuing 1978 animated film that seriously scarred me as a kid), this beautifully gilded, oak-aged sour is like a gift from Lord Frith.

Brewed in the late spring and early summer seasons of 2024, this golden sour was fermented and then aged in neutral French oak barrels with a blend of our house mixed cultures of wild yeast and bacteria. We then added hundreds of pounds of fresh freestone peaches to one barrel, and hundreds of pounds of fresh apricots to the other barrel, processed by hand and sourced right down the road in Waxahachie from Larken Farms. Then we let time work its wonders over the next 2 years, creating a vibrantly layered and juicy sour with balanced acidity and funk. Aromas of peach blossom, orchard air, and dry hay take hold, with notes of mouth-puckering peach nectar, ripe apricot flesh, and stone-fruit sweetness with a soft yet dry finish.

Now pouring in the taproom and available in both single 16oz cans and 4 packs to-go for a limited time. Take some home to your burrow. Unfiltered, unpasteurized, and can conditioned. Refrigerate 24 hours before opening.

Got some old duds that need a new home? All this week and through Sunday, Sept. 13, we’re helping the amazing folks at One Man’s Treasure by hosting a men’s clothing drive at the taproom. One Man's Treasure helps men who have been recently released from incarceration by offering not just clothing, but dignity, support, and hope for a better path forward. Employment is the foundation of a successful second chance, and your donations can help prepare their clients for interviews, work, and daily life—helping to remove barriers and support long-term stability.

We’ll gladly accept any and all gently used men’s clothing donations, including jeans, athletic shoes, jackets and winter coats, work boots, and extended sizes. The donation bin will be located in the front of the taproom right when you walk in.

Together, we can help provide new clothing and essential connections to help them prosper on their new journey.👔

For this month’s rotator, we’re putting our spin on the classic club sandwich - the 𝐏𝐔𝐁 𝐂𝐋𝐔𝐁! This stacked stunner features sliced Black Forest ham, turkey, crispy bacon, Monterey Jack and cheddar cheese, lettuce, tomato, pickled red onion, garlic Dijon aioli and whole grain beer mustard all sandwiched between layers of Texas Toast. Served with a side of our jalapeño ranch, hot peppers, and our crispy Italian-seasoned potato chips. Smoked Imperial Stout aged in bourbon barrels with granola, Dutch chocolate, marshmallow, and candy cap mushrooms / 13% ABV / Collab with Bottle Logic Brewing • Brewery + Tap Room ⁣

This past winter, we were honored to be included as one of four D-FW collabs with our new friends from Anaheim, California’s Bottle Logic Brewing. Known for their boundary pushing, decadent, barrel-aged creations, we wanted to venture out of our comfort zone a bit, and for this partnership we chose a canvas to play with unlike any other — smoked imperial stout.

Brewed with an abundance of specialty pale, roasted, and chocolate malts, we then fermented the beer with a pitch of yeast harvested from one of our other smoked beers, lending robust smoke to the underlying malt bill. After 6 months of patient slumber in Lockwood Distilling Co bourbon barrels, we then conditioned it on heaps of honey granola, decadent Dutch chocolate, mini marshmallow bits, and dried candy cap mushrooms, exhibiting all the feels of the classic campfire treat.

Aromas of smoke, bourbon, and oak arise, with gooey notes of toasted marshmallow, fudgy chocolate brownie, and sweet vanilla enticing the senses upon first sip. Earthy to***co and rich maple linger on the palate, giving way to a surprisingly smooth and warming finish. Take your time with this one, as it only gets better as it warms up.

Our coffee bar is an important part of our taproom, serving thoughtfully crafted coffee and tea drinks alongside a welcoming neighborhood atmosphere. We’re not S___bucks. We’re not any chain. The 𝑾𝑰𝑳𝑫𝑪𝑨𝑻 is back! (rawr)😻

Just in time to welcome our LHHS Wildcats (and all Lake Highlands area schools) back to the classroom, we’re firing up a fan-favorite pizza as the rotator for the month of August. And if the temps outside don’t have you sweating, this will surely get the job done.🔥

Our signature sourdough crust is baked with a habanero alfredo sauce and our cheese blend, then topped with crispy morsels of fried chicken breast tossed in our house-made Wildcat hot sauce made in collaboration with FXCKING HOT SAUCES. With smoky red jalapeños and habaneros, plus scorpion pepper powder and their Ashhole smoked reaper seasoning, it packs a serious punch. We then drizzle even more Wildcat hot sauce on top, then finish with a nest of our cool and tangy pickle slaw and sliced pickles on top. It’s a creeper, with a serious slow burn to follow. Make sure you have plenty of napkins on hand (to help with the sweat).

We suggest pairing it with a cold, Vector Formal lager to help offset the burn. Available for lunch or dinner, dine-in or to-go, but only for a limited time.
