Pimento cheese is one of the South’s finer contributions, and ours is second-to-none. Whipped with ricotta and longhorn cheddar, dressed with smoked tomato, roasted red pepper, wild arugula and a whisper of aleppo pepper, served with ciabatta. Spread liberally.
