Before opening Bangkok Dee, it took me almost a year to perfect Pad See Ew.
Learning how to control the wok, the heat, and the timing wasn’t easy. At first I had to watch everything carefully.
Now I don’t even need to think about it.
Just one look at the wok and I know when it’s right.
That’s the thing about Thai cooking — it takes time, patience, and consistency to make it perfect.
And every plate of Pad See Ew we serve carries that practice behind it.

5 simple ingredients that make Thai food actually Thai 🇹🇭
1️⃣ Fish sauce (nam pla) — not soy sauce.
This is the backbone. Salty. Funky. Essential.
2️⃣ Palm sugar — not white sugar.
Deep, caramel sweetness that balances heat.
3️⃣ Tamarind paste — the real sour in Pad Thai.
Without it? It’s just sweet noodles.
4️⃣ Thai basil — not Italian basil.
Peppery. Slightly licorice. Totally different.
5️⃣ Fresh bird’s eye chilies — not crushed red pepper.
Real flavor. Real spice.
At Bangkok Dee, we don’t substitute.
We don’t shortcut.
We cook it the way it’s meant to be cooked.
💬 Which one surprised you most? 👇

The single most powerful ingredient in Thai cooking isn't something you can buy.
It's memory.
Over 30 years, my grandmother taught me that every dish carries a story. Every simmer, every stir, every taste test—it's all an act of remembering.
When we cook Pad Krapow here at Bangkok Dee, we're not following a recipe card. We're remembering the way Grandma would taste it three times, adjust the fish sauce by feel, and know—just know—when it was ready.
That's what real Thai food tastes like. Not perfection. Not Instagram-ready plating.
It tastes like someone who loves you made it.
That's the difference between authentic and algorithmic. Between a meal and a memory.
This week, we're cooking the same way she did. With our hands, our hearts, and the recipes that raised us.
