Why Brisket Prices Are Going Up
Every BBQ restaurant in the country is struggling with the price of brisket right now. In Texas, brisket is king, and it makes up more than 20% of gross sales at BBQ joints across the state. If a product brings in at least a fifth of your sales and you keep losing money on it, you can’t stay in business.
This time is different. There’s no end in sight, and I don’t believe brisket will ever come back down to what we used to call a reasonable cost. So we have to figure out how to climb this mountain in a way that keeps brisket within reach for our customers and still lets restaurants make enough to keep margins where they need to be to keep the doors open.
Some places have taken brisket off the menu. In Texas, that’s not an option unless you take “BBQ” off your sign too. Others are talking about selling it only on certain days, but that’s risky. Most customers won’t remember which days, and they’ll leave frustrated.
The answer is what it has always been: we have to adjust our prices to protect our margins. Right now, we lose money on every slice of brisket we sell. So when you see brisket prices go up, it isn’t about gouging anyone. It’s about making sure we can keep serving great Texas BBQ.

Course 1 — Millionaire’s Bacon Deviled Eggs
Creamy, tangy deviled eggs topped with crispy candied bacon, fresh chives, and a sprinkle of smoked paprika. An elegant twist on a classic appetizer to start the evening.
Course 2 — Autumn Apple & Pecan Salad
A fresh blend of mixed greens, crisp apples, candied pecans, yellow bell pepper, pickled red onion, and crumbled feta cheese, tossed in a tangy apple c***r vinaigrette.
Course 3 — Wagyu Ribeye Steak Medallions over Wide Egg Noodles with Red W**e Mushroom Gravy, served with Garlic Butter Sautéed Spinach
Juicy, seared Wagyu ribeye steak medallions served over buttery wide egg noodles and topped with a rich red w**e mushroom gravy infused with garlic, caramelized onions, and fresh thyme. Accompanied by tender baby spinach sautéed in garlic butter and finished with a touch of fresh lemon.
Course 4 — Coconut Cream Pie
A classic, luscious coconut cream pie featuring a buttery, flaky crust filled with silky coconut custard and topped with a generous layer of fluffy whipped cream and toasted coconut flakes. A tropical, creamy finish to a romantic evening.
